Black Berry Beet Spinach Salad with Tartar Dressing



I am crazy about tartar sauce so when I put together a few ingredients I had in the kitchen and it tasted just like tarter sauce….I got pretty excited. The dressing would make an excellent dip for oven fried fish or shrimp. Its also lovely as a salad dressing like I used it today. Soft oven roasted beets, crisp cucumber and plump black berries add an interesting twist to the standard spinach salad.

Serves 2
Ingredients:

·      ½ cucumber pealed and sliced into quarters
·      3 cups of spinach
·      1 cup of black berries
·      1 large beets quartered
·      1/3 cup tartar sauce dressing

Preheat the oven to 400 degrees and seal the beets in some tin foil, bake for 30 minutes or until tender. Meanwhile combine spinach, cucumber, black berries in a bowl and toss with the dressing. When the beets are tender place them over the salad and enjoy!

Tartar Dressing

Ingredients:

·      1/2 cup greek strained plain yogurt
·      1/3 cup lemon juice
·      salt to taste
·      ½ tsp Dijon mustard
·      2 tablespoons dill

Combine and serve as a dip, salad dressing or over seafood!
