I
have always loved cipollini agrodolce, Italian sweet and sour onions, ever
since I tried them as a child in Italy. They are sweet and mild yet have a
slight molasses after taste. Cipollini, tiny onion hence the ini, are difficult to find in the States
so I substituted pearl onions and the results were great.

Serves 4
Ingredients:

2 cups of tiny pearl onions

3 tablespoons good quality balsamic vinegar
·
1 tablespoon olive oil
·
3 tablespoons sugar
·
salt
·
thyme (optional)
Heat the oil in a sauté pan over low
heat, add the onions, balsamic, sugar, thyme and a bit of salt and let cook. If
the pan seems to be getting a bit dry add a quarter cup of water and cover for
about ten minutes, continue this process until the onions are tender, this way
you achieve even cooking though the steaming process and evenly distributed
flavors with out scorching the bottom of the onions or burning the vinegar. Once
the onions are tender and the sauce has reduced, spoon onto a serving platter
and enjoy!
