Continuing
with my slight obsession of smoked paprika, I added it to one of my standard
greek yogurt lemon salad dressings. I love the extra complexity the smoked
paprika adds against the creaminess of the dressing. I always have plain greek
strained yogurt in the fridge. It is so versatile and full of calcium and
protein. The creamy texture is so luxurious and satisfying. With the freshness
of the raw bell pepper and cucumber, this light salad is a great compliment to
a heartier main.

Ingredients:

1 cucumber peeled
·
½ bell pepper
·
¼ tsp smoked paprika (or a bit more to taste)
·
juice of a half a lemon
·
1/3 cup greek strained plain yogurt
·
salt
·
½ tsp organic grainy sugar
Cut the cucumber in half, scoop the
seeds out of the cucumber and slice it into thin rounds. Slice the bell pepper
into thin long slices. Combine smoked paprika, yogurt, salt, sugar and lemon in
a bowl, pour dressing over salad.
