After a
long night writing my seven page paper on African music and a lot of kabocha
squash jojo fries to keep me going I was ready for something refreshing and
nourishing. This salad is loaded with fiber, vitamins and antioxidants. The
apples, spinach, brussel spouts and of course beets are what make this salad so
fortifying. This colorful salad is perfect after a weekend full of indulgence.

25 minutes start to finish
Serves 2
Ingredients:

3 cups of spinach
·
3 medium size beets
·
6 brussel spouts
·
1 apple
·
¼ of cranberries
·
¼ of cucumber
Cut the beets into bit size pieces and
wrap in foil. Heat the oven to 400 degrees and put the beets in. After about
twenty minutes add the brussel spouts halved. Meanwhile cut the cucumber into
matchsticks and slice the apple. I like to steam the cranberries so that they
plump up but this is optional. After about eight minutes check the brussel spouts
and add the beats and sprouts to the salad once cooled. Add all the ingredients
to a salad bowl and toss with dressing.
Blue
Cheese Salad Dressing
Ingredients:

¼ cup blue cheese
·
4 table spoons lemon juice
·
3 tablespoons of water (more if needed)
·
1-2 tablespoons of plain greek strained yogurt
·
salt to taste
Combine and pour over your salad!
Should make enough for four salads.
