Roasted Cauliflower Leek Soup with Seared Chicken



 Leeks are new to me but roasting cauliflower and garlic isn’t so I combined the two and pureed it into a lovely soup! Threw some seared chicken on top with some sprinkled chives on top and I think it turned out to be prettyyyy tasty.

Serves 4

Ingredients:

·      1 head of cauliflower
·      2 leeks
·      2 cloves of garlic
·      smoked paprika (I’m clearly a little obsessed)
·      salt
·      olive oil
·      a dollop of greek strained yogurt
·      Seared chicken

Toss cauliflower with olive oil and salt, roast cauliflower and garlic at 375 for 35 minutes or until golden. Meanwhile after the leeks are rinsed of their dirt slice them and sauté in a bit of olive oil. Add the roast cauliflower, garlic and enough water to cover and puree! Adjust seasoning, garnish with seared chicken, paprika, chives and yogurt. Enjoy!
