Serves 4
Ingredients:

1 head of cauliflower
·
2 leeks
·
2 cloves of garlic
·
smoked paprika (I’m clearly a little obsessed)
·
salt
·
olive oil
·
a dollop of greek strained yogurt
·
Seared chicken
Toss cauliflower with olive oil and
salt, roast cauliflower and garlic at 375 for 35 minutes or until golden.
Meanwhile after the leeks are rinsed of their dirt slice them and sauté in a
bit of olive oil. Add the roast cauliflower, garlic and enough water to cover
and puree! Adjust seasoning, garnish with seared chicken, paprika, chives and
yogurt. Enjoy!
