I made this
for lunch service at the UCSD food coop, which is a student owned food
collective on campus that is super awesome! The avocado acts as a creamy dressing and is full of healthy fats and the lemon adds a great zip. This is one of my favorite dressings!

Serves 4
Ingredients:

1 big bunch of kale
·
1 ripe avocado
·
juice of 2 small lemons
·
½ cup dried cranberries
·
1/3 cup pumpkin seeds
·
salt
·
pepper
Remove
the ribs of the kale and chop. Mash the avocado and combine with lemon juice
and salt and pepper to taste. Toss the kale, cranberries, pumpkin seeds with
the avocado dressing. Enjoy with friends!
